Brown Rice with Onions and Pecans

INGREDIENTS:

1 cup long-grain brown rice
3 tablespoons butter
1/2 cup chopped onion
1/2 cup chopped green onion
2 garlic cloves, minced
1/2 cup coarsely chopped pecans
2 tablespoons chopped green onion tops

PREPARATION:

Prepare brown rice in medium saucepan, following package instructions.
About 15 minutes before the rice is done, melt the butter in a heavy skillet over medium-low heat. Add the onion and saut?, stirring frequently, until the onion is softened and begins to yellow, about 10 minutes.
Stir in the garlic, pecans, and green onion; saut? over medium heat, stirring constantly, until the onions are golden and the garlic is tender, about 5 minutes.
Remove rice from heat and let stand, covered, for 5 minutes.

Spoon brown rice into a bowl; spoon the onions and pecans on top and toss lightly to combine. Garnish with the chopped green onion tops.
Brown rice with onions and pecans serves 4.

Brown Rice and Pork Chop Bake

INGREDIENTS:

3/4 cup brown rice
2 cups beef broth
4 smoked pork chops
1 tablespoon shortening
2 medium carrots, cut in julienne strips
1/2 cup coarsely chopped onion
1/2 cup white wine
1/4 teaspoon dried leaf oregano, crumbled
1/4 teaspoon dried marjoram, crumbled
1/2 teaspoon salt
dash ground black pepper

PREPARATION:

In a saucepan, combine brown rice and beef broth; bring to boil. Reduce heat, cover, and simmer for 45 minutes. Brown pork chops lightly on both sides in hot oil. Add remaining ingredients to rice; transfer to a shallow baking dish.

Arrange pork chops on top. Cover with foil and bake at 350° for 45 to 55 minutes, stirring the brown rice a few times. Brown rice and smoked pork chop recipe serves 4.
