Chicken, Broccoli and Rice Casserole

CHICKEN, BROCCOLI AND RICE CASSEROLE Ingredients: 1 cup of rice 14 oz bag of frozen broccoli florets 3 or 4 large chicken breasts (roughly, more or less is fine) 1 can cream of chicken soup 1 can cream of cheddar cheese soup ? cup of milk 2 cups grated cheddar cheese ? teaspoon crushed garlic 1 tablespoon chopped dried onion Salt and pepper to taste Directions: 1. Cook rice as you would and set aside. 2. Salt and pepper chicken and bake in 350 degree oven until juices run clear (about 45 min) then cut into bite size pieces OR cut raw chicken into bite size pieces and saut? in a pan with butter or oil. Set chicken aside. 3. Steam broccoli and set aside (do not overcook! Broccoli should still be a bit crunchy. It will continue to cook in oven) 4. In a large mixing bowl, combine both cans of soup, milk, garlic powder, and some pepper 5. Add all of the cooked rice and cooked chicken to the soup mixture and combine 6. Add a handful of cheese and mix 7. Pour mixture in a greased 9×13 baking dish and top with remaining cheese 8. Bake in 350 degree oven until bubbly and golden brown, about 25 minutes. 9. Allow time to cool before digging in. Enjoy!
