Simple…

First the secrete to great Mexican rice is that you puree onion, garlic, mango, cilantro, tomato… whatever into the water/stock you are cooking the rice in.

So… the kind of sweet rice I like is less Mexican more MexiCali, goes like this.

1 cup white rice
2 tbls. canola or other high temp veggie oil.
2 tsp. ground chipotle powder
1 clove garlic
1 tsp ground cumin
2 tbls sweetened tamarind paste (Mexican market)
2 cups chicken broth or water
Salt to taste

Combine all ingredients but rice and oil in blender and puree well!

Then fry the rice in the oil over high heat stirring constantly till light golden color and aromatics come forth in a whirling delightful nosegasm, you will know it when you smell it trust me.

then add the contents of the blender and if it boils immediately turn the heat to low, if not wait till it boils and turn to low. Wait till it boils to cover the pot.

I have found that with this 17 – 20 min is about right.

Uncover and let air for about 10 min before serving.

Top with chopped fresh mango, hominy and cilantro tossed in lime juice and agave nectar.

… sounds harder than it is I swear!
