I’d make the soup using half the milk and then add cooked rice until it was somewhat thick. Add about 1/2 cup shredded cheese if desired. Chill to set.
Stuff raw chicken breast and pin with toothpicks. Poach in 1″ of water in the oven for 45 minutes or until chicken flesh is firm. Top with some more thick soup to finish and parsley.
