My answer doesn’t fit since we are in the veggie section, may I make a suggestion. Go to any asian store, buy rice sticks (looks like a bag of one continuous noodle), soak them in water for a hour or so, then stir fry them with soy sauce and mixed veggies (stir fry bag is easy). You just made a very very very very simple pancit. Very good.
