Red Lentil Dhal curry, Roti bread, appam, papadam, mint raita, cucumber

A simple red lentil dhal with carrot, tomatoes, ginger, garlic, onion, finished with browned onions, cumin seeds, mustard seeds, crisped curry leaves in oil and chopped fresh coriander.
Crispy Kawan-brand roti was quite a nice match for the dhal, but not quite as fluffy, nor fragrant with ghee compared to freshly made ones.
My appam failure was based on an Easy Appam on Kerala Recipes, but I didn’t have coconut milk, and I think I made the batter too thin. The result was more like a Chinese steamed rice pudding, like a ?? Chwee Kueh, which went well with the sambal tumis!
