Spicy Chicken Pilau

A pilaf that is pretty easy to make. This recipe is Rick Stein’s version with chicken.

Heat some oil and soften minced garlic and ginger with the sliced onions until just brown. Add spices and chicken, and allow to brown. Add tomatoes, water, turmeric, rice, curry leaves. Bring to a boil, cover and simmer at the lowest flame for about 20 minutes. An easier version still is to use curry powder or paste.

I made the mistake of mixing red rice which when coated with oil is horribly hard to cook through. This resulted in the grains of red rice that were less than tender.
