Sushi Rice question!?

Hi!

I’m looking for a recipe for making sushi rice. Preferably, one you have really used too. Not one pulled off randomly online. I have the rice vinegar and etc. but not sure what a GOOD amount of vinegar, salt and sugar is. I don’t want a strong flavor or unhealthy amount. I don’t want to attempt it without have a decent basis of knowledge on it. I know how to cook the rice etc. I’m just not sure on the mixture..

Also, would jasmine rice be okay to use? I figured it’d be fine since its short grain. I can’t find the “right” one. I’ve heard calrose is good, but I cant find it where I live. (I have a korean market close by too) :[

I have my own sushi bar business, and here is basic tip of sushi rice mix recipe.

since you know how to cook the rice i wont ex playing too much details.

if you like to cook with brown rice, YES. you can but, you have to mix with sweet brown rice. Because regular brown rice does not have enough ofstickinesss texture. so 1/4(1=sweet brown rice, 3=reg. brown rice)is good to be cook together.

jasmin rice?? well its gonna be a big challenge. but following the above recipe but with sweet white rice 1/4(1=sweet white rice, 3=jasmin rice).

oh before you start the rice cooking, put some piece od seaweed(korean people call “Dah Shi Mah?) about 3 to 4onces. this does help your rice textures and taste.

vineger part………. if you try to make that from your home you will spending more money a then what you expect . so i recommend to buy from korean market its call sushi vineger. they do have small size. but incase if you cant find it from there, go the big american market(randalls, kroger,whole food store,………etc) ask the one of the employees that international food section.

But, if you still want a make your own vineger here is how to do:

This recipe is for rice vinegar sufficient for 3 cups of dry sushi rice for about 10 rolls of sushi.

1/2 a cup of commercial rice vinegar
2 tbsp. sugar
1/2 tbsp. salt
1 whole lemon or 3oz of lemon juice

a small pot

Elegantly throw all of the ingredients into the pot. On low heat, stir constantly until you get a solid mix of the vinegar with the salt and sugar.After cool down, put your lemon juice or squeeze whole lemon juice and mix all together again. There, you are done. Now, when your rice is ready, mix it with the vinegar with a wooden spoon and let it cool by the window (never in a fridge).

*Tip: put some little waters on your wooden spoon while you mixing the rice. so, thats the way rice doesnt stick it on your spoons.

just extra help here is the name of sushi rice brand you can find:

kokuho rice, Kokuho sushi rice(both of them are same qualitys), Han-mi rice, Han mi sushi rice, Han mi brown rice, Han mi sweet brown rice. this brand i always recommend to my customers
