Thai Spicy Chicken with Basil

2 tbs vegetable oil
2 tsps sesame oil
3 cloves garlic, finely chopped
1 tbs grated ginger
4 red chili peppers, halved and seeded
1 red bell pepper, seeded and sliced
1 lb chicken, cut into bite-sized pieces
2 tbs soy sauce
2 tbs water
2 tsps brown sugar
1/2 cup fresh basil leaves
6 scallions cut into 1-inch pieces
Heat the vegetable oil and sesame oil in a pan over medium heat. Add the garlic, ginger and chili peppers and cook for about 1 minute.
Raise the heat to high and add the bell pepper and chicken. Cook, stirring often, for 5 minutes. Stir in the soy sauce, water and brown sugar. Reduce heat and cook for another 5 minutes.
Stir in the basil and scallions. Serve over rice.
I used some red curry paste, about 1 tbs in place of the chili peppers and used a teaspoon of dried basil in place of the fresh.
This makes a great tangy sauce and has a nice kick to it.
