Question by Yurri: unevenly cooked basmati rice grains?
I use good quality basmaty rice, follow Delia recipe for perfect rice to the letter. Measure the water and the rice.. but the rice grain is always hard and starchy tasting at the ends almost raw-dry. How can I cook a perfectly cooked basmati rice, that is as good as the curry take away I order?

there are different causes for this.
1. UNEVEN DISTRIBUTION OF HEAT
if ur using rice cooker. be sure its working properly.
if not make sure heat it distributed evenly whether ur using a gas stove (fire) or electric stove.
and make sure the rice is evenly placed inside the pot. no small mountains or hills. it has to be flat.
2. WRONG WATER PROPORTIONS
generally, the proportion is 1 =1. I cup rice, 1 cup water.
if its hard and starchy, that means its not yet cooked u must add more water.
rice varieties consume different amounts of water. even the same rice variety may have varying water needs per brand. good quality rice normally needs half a cup more (eg. 1c rice = 1 1/2 c water or 2 c rice = 3 c water).
(Note: Cooking time for rice can be tricky. Thus this may not be the basis as it differs per variety and cooking method.)
try to experiment and eventually u will see how much water you need to put in the kind of rice that you have to achieve the texture that you like.
