The recipe is from the May 1992 issue of Bon App?tit magazine. Very easy to make and it tastes pretty good!

I was curious about the chef who developed this recipe and found the website for his restaurant, Restaurante Virrey Palafox (website is in Spanish only – the Google translation is pretty terrible). It’s located in the province of Soria about 180 km. north of Madrid.
