Question by Umbrella: What exactly is Japanese rice?
I want to make sushi, and the recipe states that I need to use Japanese rice. I know not to use American rice; the confusion comes from whether I should use sticky rice (used in Chinese cooking to make lo mei fan in dim sum) or just regular, non-glutinous Asian rice. The recipe site I visited referred to Japanese rice as sticky rice, so now I’m confused. :/

Use short grain white rice. Cal-rose or Nishiki is good.
